A couple of weeks ago I made dinner for my boyfriend and turned to a couple of my favorite cookbooks for inspiration. I am terrible and forgot to take pictures but I assure you it tasted delicious!
For sides, I made potatoes and winter greens adapted from Small Gatherings by Jessica Strand. A new favorite of mine, these recipes have yet to fail me. I made the Garlicky Winter Greens and used Rainbow Chard instead of the mixed greens in the recipe. For 2 servings, simply heat 3 tablespoons of olive oil over medium-high, add 3 large thinly sliced garlic cloves and sautee until lightly golden, add sliced rainbow chard and stir for 2-3 minutes. Cover and steam for 5 minutes or until wilted. Squeeze a little lemon over then greens and serve.
The Roasted New Potatoes were also delicious. Toss 1.5 lbs new potatoes (I used 3 medium potatoes cut into chunks) with 2 T of olive oil, a little salt and pepper, and 2 tsp minced fresh rosemary. Roast at 425F for 20 min, toss around with spatula, and roast 10 more minutes.
